Sydney Spit Roast Hire has a streamline process for the set up, and pick up of the spit roast.
Typically we provide the meat on your behalf. When we arrive we will set up the spit roast for you. The area should be fairly well ventalated. We can set up a charcoal spit roast on an appartment balcony. Depending on weather we can have it outside if you wish, although typically under cover is better.
Once you have selected a position for the spit we will start the coals burning. Charcoal beads give a long and even heat. We will then rack the meat. If you haven't used a spit before we provide you with a five minute lesson. We will leave any extras you ordered including the marinade.
Some tips for using a spit. Occasionally give the coals a poke to remove the white crust that forms over a few hours. For larger beasts its worthwhile to add five or six coals each hour after the first three hours to keep the heat up.
This might sound obvious but do turn the motor off when you are ready to carve. Most people like to cure the meat for at least 20 minutes before serving. So if the meat is ready before your guest are ready to eat simply move it as high as you can from the fire then move the charcoal coals to each end of the spit. When carving your spit roast take long horizontal cuts along the back of the beast.
If your party is in the evening we will normally leave the spit with you overnight and grab it from you the next day.
